EAST VINCENT >> Both adults and children at East Vincent Elementary School took advantage of the Irish holiday to show just how green they could be. Students and staff celebrated St. Patrick’s Day by going green through large bow ties, full-body costumes and more. All the elementary schools in the Owen J. Roberts School District took advantage of the colorful holiday this week by introducing students to healthy spinach smoothies. The students weren’t hesitant to try the green and nutritious drink, many asking for seconds and even thirds. The district does a “Go for the Greens” campaign every year where they encourage elementary students to try healthy, green food. This year it was all about powering up with spinach.
POWER UP WITH SPINACH SMOOTHIE
1 medium ripe banana
1 cup of fresh, canned or frozen pineapple
2 large handfuls of fresh spinach (washed)
4 to 6 ice cubes, use less if frozen fruit is used
1 cup of 100% orange juice
In a blender, combine banana, pineapple, spinach and ice cubes. Puree until smooth. The smoothie is made sweeter by using orange juice, but to cut the sweetness you can substitute water.
