Superfood Fruit Salad Recipe


The term “superfood” is used to describe food that’s rich in nutrients making it very healthy and beneficial for overall wellbeing. Green leafy vegetables such as kale and spinach are among those items known as superfoods. A salad made with these vegetables is a great way to celebrate St. Patrick’s Day while eating healthy at the same time.



2 cups of baby kale, rinsed and dried

2 cups of baby arugula, rinsed and dried

2 cups of baby spinach, rinsed and dried

½ cup of red onion, sliced

2 cups of strawberries, sliced

1 cup of blueberries

½ cup of walnuts, chopped


½ cup of balsamic vinegar

½ cup of light olive oil

1 garlic clove, minced

3 tablespoons of fresh cilantro, chopped

4 tablespoons of light agave

½ teaspoon of sea salt

½ teaspoon of ground black pepper


Toss baby kale, arugula and spinach in a large salad bowl. Then, top with onions, blueberries, strawberries and walnuts. Lightly toss and set aside. Whisk all the dressing ingredients and serve aside the salad.

Recipe yields 4-6 servings
